2XO "The Innkeeper's Blend" is a 104-proof (52% ABV) Kentucky Straight Bourbon Whiskey created by renowned master blender Dixon Dedman. Released in April 2023, it marks the second small-batch iteration in the brand’s limited-time Icon Series, following the initial "Phoenix Blend". The name pays homage to Dedman's family history in the hospitality industry as the long-time former owners of the James Beard Award-winning Beaumont Inn on Kentucky's Bourbon Trail.
The 2XO Process
The brand name 2XO stands for "Two Times Oak," which highlights Dedman's signature production method.
- The Blend: It is crafted by blending multiple sourced bourbon mash bills, combining both high-rye and low-rye components.
- Secondary Maturation: The mature blend is re-barreled into heavily charred new oak barrels for an additional aging period before final bottling. This second exposure to fresh wood intensely accelerates the depth of flavor, color, and oak influence.
Tasting Profile
- Nose: Rich, sweet, and deeply oak-forward. Prominent aromas include vanilla, toffee, brown sugar, caramel, and a distinctive hint of fresh-sanded oak and blueberry.
- Palate: Viscous and full-bodied. Upfront caramel sweetness transitions into ripe red fruits, cherry, butterscotch, toasted marshmallow, and a structured, peppery rye spice in the mid-palate.
- Finish: Long and complex. It leads with a creamy, charred marshmallow note before settling into dark chocolate, espresso bean, and a light touch of residual char.
