Griffo Stout Barreled Whiskey is an award-winning, small-batch finished American whiskey produced by Griffo Distillery in Petaluma, California. Bottled at 90 proof (45% ABV), it bridges the worlds of craft beer and spirits by combining a unique grain build with local brewery barrel aging.
The Production Process
Unlike many barrel-finished spirits that rely entirely on the wood for flavor, Griffo builds the stout profile directly into the liquid from the start:
- The Mash Bill: Composed of 55% corn, 35% rye, and 10% roasted barley. The addition of roasted malts—the same grains used to brew dark stouts—imparts an inherent cocoa and espresso foundation.
- Primary Aging: The spirit is initially matured in new American oak barrels coopered in Napa, California.
- The Finish: It undergoes a final finishing period in used stout beer barrels sourced from local Northern California craft partners, most notably Lagunitas Brewing Company and Mare Island Brewing Co..
Flavor Profile
The combination of the roasted grains and beer cask finishing creates a decadent, dark-flavor profile:
