The Hibiki Blossom Harmony 2021 is a historic, highly collectible release from the House of Suntory, marking the inaugural edition of the annual spring Blossom Harmony series. Launched in Japan on May 25, 2021, with an initial limited run of approximately 30,000 bottles, it represents the first time a Hibiki expression was ever finished in rare Sakura (Japanese cherry blossom) wood casks.
The Liquid & Blending Philosophy
Chief Blender Shinji Fukuyo crafted this expression by marrying the core, multi-distillery Hibiki Harmony blend—comprising malt and grain whiskies from Yamazaki, Hakushu, and Chita—with whiskies specifically finished in Sakura wood.
- The Sakura Twist: The cherry blossom wood maturation (widely suspected to feature Chita grain components) infuses a distinct, delicate layer of bright floral aromas directly over Hibiki’s foundational footprint of American oak, sherry cask, and Mizunara character.
- Specifications: It is a Non-Age Statement (NAS) blended Japanese whisky bottled at 43% ABV (86 proof) in a standard 700mL volume (though 750mL variants exist for specific export markets)
Tasting Profile
The Sakura cask finish introduces an explicitly soft, seasonal brightness to the classic smooth palate:
- Nose: Intense floral bouquet highlighted by cherry blossoms, sweet peach, honeysuckle, and rose.

True to Suntory's deep roots in Japanese aesthetics, the bottle and packaging are explicitly designed for seasonal gift-giving (Ochugen).
- The Bottle: Features Hibiki's iconic 24-faceted decanter, which represents the 24 solar terms (Sekki) of the traditional Japanese calendar. For this 2021 debut, the glass is dressed in an intricate cherry-blossom livery.
