Kapahi Bourbon Whisky is a unique small-batch American bourbon produced by the Kauai Distilling Company, notable for utilizing 100% Hawaii-grown corn cultivated on the island of Kauai. Because the operation does not maintain a physical distilling facility on the island, the grain is shipped to Dry Fly Distilling in Spokane, Washington, where it is twice-distilled, aged, and bottled before being released.  
The Backstory & Production
The brand was founded by a local Hawaiian farmer who originally expanded from coffee and premium cigars into growing corn with the intent of creating an island-soul whiskey.  
  • The Mash Bill: Crafted using sweet corn grown on Hawaiian farms, combined with a portion of rye and barley. Enthusiasts and reviewers note that the flavor profile leans forward with a high-rye impression.  
  • Distillation & Maturation: It is twice-distilled and traditionally aged in unblended, single charred new American Oak barrels. While early releases carried a 2-year age statement, current expressions feature a matured 5-year to 6-year age statement
  • Proof: Bottled at 93 Proof (46.5% ABV)
Flavor Profile & Tasting Notes
Despite its unique trans-Pacific production process, it remains a distinct, highly competent straight bourbon. 
  • Nose: Bright and tropical. It opens with explicit notes of pineapple, canned peaches, marzipan, and sweetened black tea, alongside a dusty, sweet corn grain aroma and a faint touch of jalapeño pepper.  
  • Palate: Tangy with a sugary sweetness. Expect layers of sweet black tea, vanilla bean, cocoa, honey, and a prominent baking spice pop of cinnamon and nutmeg.
  • Finish: Lean and dry. It finishes with notes of sweet tobacco, tight oak structure, and light citrus, avoiding a heavy, oily lingering profile.
