The Willett Pot Still Reserve Bourbon Cask Strength is a limited, uncut, and unfiltered semi-annual expression of the distillery's flagship pour. Packaged in the iconic pot still-shaped glass decanter, this version elevates the profile by skipping the traditional rye grain entirely. Instead, it highlights a rich, sweeter, and more dessert-forward character bottled directly at barrel proof.
Key Technical Specifications
- Mash Bill: A custom wheated recipe consisting of 65% corn, 20% wheat, and 15% malted barley.
- Entry Proof: Barreled at a relatively low 115 proof. This lower concentration allows the distillate to pull more water-soluble wood sugars and complex vanillin notes out of the charred oak during aging.
- Release Cadence: Distributed twice a year as a semi-annual release, deliberately timed to coincide with the Spring and Fall Equinoxes.
Profile and Tasting Notes
The replacement of rye with wheat yields a much softer, highly concentrated mouthfeel compared to the standard small-batch release.
- Nose: Rich brown sugar, vanilla bean, and toasted oak, underlying bright notes of citrus peel and light baking spices.
- Palate: Full-bodied and intense, featuring dense layers of buttery caramel, warm honey, freshly baked pastry, and a distinct herbal touch of sweet mint.
- Finish: Long, oily, and warming, emphasizing charred oak sugars and deep wood spices without being overwhelmingly hot
